As for wines, the bar of the Monkey restaurant in San Antonio offers an eclectic cellar. We collaborate almost exclusively with small biodynamic producers, with whom we have created a lasting relationship, whose trust is the common thread. Each of our wines is the result of a crush on Antony Faotto and David Janaud and Ben Janaud, who pay particular attention to know-how and family transmission from generation to generation.

White wine signed Bernard and Fabrice Gripa, champagne from the great Pierre Mignon for lovers of fine bubbles, the Monkey bar in Ibiza offers more than fifty references selected with the greatest care from all regions of France, only for the pleasure of your taste buds. As for citrus lovers, they will naturally and irresistibly be drawn to the Pamela: on a Verjus base, the grapefruit notes blend symphoniously with the Sisho vinegar (homemade, please!), whose acid and aromatic notes are combined with the sugar syrup with sweetness.

Once a week, our Bartenders will offer you a new recipe, a creation resulting from the combination of their passion and their taste for challenges.
